I tried this, and it did not seem to work; but I didn't wait long to test it. I may be the files had not had time to download. To star a folder, tap the (i) icon next to it and select the star.

I have Google Docs on my iPad. When I select a docx file from the Google Drive app, it automatically shoots me over to Google Docs to edit. To get a file from Drive to actual Wordthe only method I see is to click the 3 dots next to the file in Drive and send a copy of the file to Word.
